Today, I’m participating in the Samjin Eomuk Recipe Contest with a delightful creation: ‘Rolled Fish Cake Rice with Garlic Soy Glaze.’ I’ve used their ‘Skewered Fish Cake’ to make this dish that’s perfect for the whole family, especially those with discerning tastes. This recipe transforms simple ingredients into a visually appealing and incredibly tasty meal. The combination of seasoned rice, fresh vegetables, savory Spam, and tender crab sticks, all rolled up in soft fish cake and lightly fried, then coated in a sweet and savory garlic soy glaze, is simply irresistible. It’s a fun and delicious way to enjoy fish cake and make any meal special!

  • Cooked Rice 200g (approx. 1 bowl)
  • Crab Sticks (imitation crab meat) 2 sticks
  • Gimbap Style Pickled Radish 2 pieces
  • Sliced Cheddar Cheese 2 slices
  • Spam 30g

Garlic Soy Glaze

  • Soy Sauce 2 Tbsp
  • Sugar 1 Tbsp
  • Corn Syrup (or similar sweetener) 1 Tbsp
  • Minced Garlic 1/2 Tbsp
  • Potato Starch 5 Tbsp (for coating fish cake)
  • Eggs 2 (for coating fish cake)

Cooking Instructions

Step 1

First, gently blanch the 2 sheets of skewered fish cake in boiling water. This softens them, making them easier to roll, and also removes any impurities.

Cut the gimbap-style pickled radish into three equal pieces each. Aim for pieces that will fit nicely when rolled inside the fish cake.

Dice the Spam into cubes that are similar in size to the cut pickled radish. Heat a non-stick pan over medium-low heat (no oil needed) and pan-fry the Spam until golden brown on all sides. This renders some of the fat and intensifies the flavor.

Lay the blanched fish cake flat on your work surface.

Place one perilla leaf evenly over the surface of the fish cake. The aromatic quality of the perilla will beautifully complement the other ingredients.
