Main Ingredients

  • 1 bowl of cooked rice
  • 2 Tbsp ketchup
  • 2 eggs
  • 1 sheet of seaweed (gim)
  • A little zucchini
  • A little carrot
  • A little onion
  • 1 Korean green chili (optional)
  • A pinch of toasted sesame seeds
  • A pinch of dried parsley flakes

Fried Rice Seasoning

  • 1 tsp gochujang (Korean chili paste)
  • 1/2 tsp maesilcheong (Korean plum extract)
  • A pinch of salt

Cooking Instructions

Step 1

First, prepare 2 eggs and 1 sheet of seaweed (gim). Having the eggs ready will make it easier when you need to prepare the omelet.

Step 1

Step 2

Finely dice the zucchini, carrot, onion, and Korean green chili (if you prefer a spicier taste). These vegetables will add color and texture to your fried rice. Dicing them small prevents the fried rice from clumping and helps it cook evenly.

Step 2

Step 3

Heat about 1 tablespoon of cooking oil in a pan over medium heat. Add all the diced vegetables and stir-fry until fragrant. Cook until the carrots and zucchini are slightly translucent.

Step 3

Step 4

Once the vegetables are cooked, add 1 bowl of cooked rice and 2 tablespoons of ketchup. Stir well to combine and fry for a minute. For a spicier flavor, add 1 teaspoon of gochujang and 1/2 teaspoon of maesilcheong for a hint of sweetness and depth. Sprinkle with toasted sesame seeds and turn off the heat.

Step 4

Step 5

Crack the 2 eggs into a bowl. For a smoother omelet, strain the beaten eggs through a sieve. This removes any unmixed whites and ensures a silky texture. Mix in a pinch of salt and dried parsley flakes.

Step 5

Step 6

Once the fried rice has cooled slightly, place it on a sushi mat or plastic wrap and shape it into a long log. Gently press the rice down as you roll it to form a compact shape that will fit nicely inside the omelet.

Step 6

Step 7

Lightly grease a pan with oil over medium-low heat. Pour a thin layer of the prepared egg mixture into the pan. When the egg is about halfway set, place the shaped fried rice log onto the egg and carefully roll them together. Adjust the heat as needed to prevent the egg from burning. Once fully cooked and rolled, slice it into pieces and enjoy your delicious Gyeranmari Bap!
