Main Ingredients- 500g fresh salmon fillet (prepared in thick portions)
- 1 handful of oyster mushrooms (trim the ends and tear into bite-sized pieces)
- 1/2 onion (thinly sliced)
- 200g sea purslane (washed thoroughly and drained)
Salmon Seasoning and Coating- 1/4 tsp salt
- A pinch of black pepper
- 1 Tbsp olive oil
- 1/4 tsp salt

Cooking Instructions
Step 1
First, prepare the star of our dish: the salmon. Season the salmon fillet evenly with salt and black pepper. Then, lightly coat the surface of the salmon with olive oil; this will help keep it moist during cooking and enhance its flavor.

We’ll be cooking the prepared salmon using an air fryer for a delightful finish. Preheat your air fryer to 200°C (390°F), then place the salmon inside and cook for approximately 12 minutes. Depending on the thickness of your salmon and your specific air fryer model, you may need to adjust the cooking time. Check it periodically to ensure it’s cooked to perfection.

While the salmon is cooking, prepare the accompanying vegetables. Heat a pan over medium heat with a little olive oil. First, sauté the thinly sliced onion until it becomes translucent and fragrant. Once the onion is softened, add the oyster mushrooms and stir-fry them together. When the mushrooms begin to cook, add soy sauce and plum extract to enhance the savory flavor.
