Royal Stir-fried Rice Cakes (Gungjung Tteokbokki)

A nutritious and visually appealing Royal Stir-fried Rice Cake, perfect as a winter break snack for children. This dish is packed with nutrients and boasts vibrant colors.
Main Ingredients- 100g Rice cakes for Tteokbokki (soft)
- 1 Shiitake mushroom (fresh)
- 40g Beef (bulgogi cut or ground)
- 2 Egg yolks
- 1 Egg white
- 1 Red chili pepper (for color)
- 3 florets Blanched broccoli (approx. 50g)
Marinade for Shiitake Mushroom & Beef- 1.5 Tbsp Soy sauce
- 1 Tbsp Sesame oil
- 1 tsp Minced garlic
- 1 Tbsp Minced green onion
- Pinch of Black pepper
- Pinch of Sesame seeds
Tteokbokki Seasoning- 1 Tbsp Cooking oil
- 1 Tbsp Soy sauce
- 0.5 tsp Sesame oil
- 1.5 Tbsp Soy sauce
- 1 Tbsp Sesame oil
- 1 tsp Minced garlic
- 1 Tbsp Minced green onion
- Pinch of Black pepper
- Pinch of Sesame seeds
Tteokbokki Seasoning- 1 Tbsp Cooking oil
- 1 Tbsp Soy sauce
- 0.5 tsp Sesame oil
Cooking Instructions
Step 1
Soak the soft rice cakes in water for about 10 minutes until they become pliable. Slice the shiitake mushroom thinly after removing the stem, and cut the beef into bite-sized pieces similar in length to the rice cakes. Thinly slice the red chili pepper diagonally to add color, and cut the blanched broccoli into bite-sized florets.
Step 2
In a bowl, combine the shiitake mushrooms and beef with the marinade ingredients (1.5 Tbsp soy sauce, 1 Tbsp sesame oil, 1 tsp minced garlic, 1 Tbsp minced green onion, a pinch of black pepper, and a pinch of sesame seeds). Mix well and let it marinate for about 30 minutes for the flavors to meld. Separately, whisk the eggs and make thin egg crepes. Once cooled, slice them into pieces similar in size to the rice cakes. (You can fry the yolks and whites separately for a prettier look.)
Step 3
Heat 1 Tbsp of cooking oil in a pan. Add the soaked rice cakes along with the Tteokbokki seasoning ingredients (1 Tbsp soy sauce, a little minced garlic – optional, 0.5 tsp sesame oil). Stir-fry until the rice cakes are soft and chewy. It’s important to stir gently to prevent them from sticking together.
Step 4
In another pan (or the same pan after wiping it clean), lightly add oil and stir-fry the marinated shiitake mushrooms and beef separately. Break up the beef as it cooks to prevent clumping, and stir-fry the shiitake mushrooms until fragrant. Be careful not to burn the ingredients.
Step 5
Once the beef is cooked, combine the stir-fried rice cakes, beef, and shiitake mushrooms in one pan and mix lightly. If the mixture seems too dry, add 2-3 Tbsp of water or anchovy-kelp broth to moisten it. When the liquid has almost evaporated, add the blanched broccoli, red chili pepper, and the prepared egg crepes. Gently toss everything together to combine. Avoid overcooking, as this can make the ingredients mushy.
Step 6
Transfer the finished Royal Stir-fried Rice Cakes to a serving plate. Sprinkle with sesame seeds for added flavor and garnish with the sliced egg crepes for a beautiful presentation. Enjoy the dish while it’s warm for the best taste.
