Main Ingredients

  • Penne pasta 100g
  • 1/2 carrot
  • 1 fresh shiitake mushroom
  • 1/2 green bell pepper
  • 1/2 onion
  • 4 cloves garlic
  • Scallions, a small amount (for garnish)
  • Sesame seeds, a small amount (for garnish)

Royal Seasoning Sauce

  • 1.5 Tbsp soy sauce
  • 1 Tbsp mirin (sweet rice wine)
  • 1 Tbsp sesame oil
  • 1/2 Tbsp oligosaccharide (or corn syrup)
  • 1/2 Tbsp oyster sauce
  • 1 tsp minced garlic
  • 1 tsp sugar
  • Pinch of black pepper

Cooking Instructions

Step 1

In a large pot, bring 1 liter of water to a rolling boil with 10g of salt. Once boiling, add the penne pasta and cook for about 7 minutes, which is 1 minute less than the package instructions. Reserve about 1 ladleful of the pasta water to help adjust the sauce consistency later.

While the pasta is cooking, wash all the vegetables thoroughly and slice them into uniform strips, about 0.5 cm thick. Thinly slice the garlic cloves.

In a small bowl, combine all the seasoning ingredients: soy sauce, mirin, sesame oil, oligosaccharide, oyster sauce, minced garlic, sugar, and pepper. Stir well until the sugar dissolves to prepare the sauce.

Heat 4 tablespoons of olive oil in a deep pan or wok over medium-low heat. Add the sliced garlic and sauté gently for 1-2 minutes until fragrant, being careful not to burn it.

Once the garlic is fragrant, add the sliced onion, carrot, and shiitake mushroom. Increase the heat to medium and stir-fry for about 1-2 minutes until the vegetables begin to soften slightly. Finally, add the green bell pepper and 1 tablespoon of the prepared sauce. Stir-fry for another minute to allow the vegetables to absorb the flavor.

Once the vegetables are stir-fried, remove them from the heat and set aside on a separate plate. This helps maintain the crispness of the vegetables and allows the flavors to meld beautifully.

Now, add the cooked penne pasta and about half a ladleful (approx. 50ml) of the reserved pasta water to the pan. Pour in the remaining prepared sauce. Stir-fry over medium-high heat for 1-2 minutes, tossing well to coat the penne and vegetables evenly with the sauce. Lastly, add the chopped scallions (about 2 stalks, cut into 4cm lengths) and mix once more.
