Ingredients
  • 1 Tortilla
  • 1.5 packs Mozzarella Cheese (adjust to taste)
  • 3-4 Cherry Tomatoes
  • 0.5 Tbsp Cooking Oil
  • Pinch of Salt
  • Honey (optional, for serving)

Cooking Instructions

Step 1

First, lightly grease a pan with cooking oil and toast the tortilla over low heat. Be careful not to burn the edges while slicing the tomatoes, as the heat might be too high! Toasting over low heat will make the tortilla puff up beautifully. Once puffed, flip it and toast the other side until golden brown. This step ensures a crispy tortilla and enhances its flavor.

Step 2

While the tortilla is toasting, wash and thinly slice 3-4 cherry tomatoes. Slicing them evenly will make for a prettier pizza topping.

Step 3

On the toasted tortilla, generously sprinkle about 1.5 packs of mozzarella cheese. It’s best to leave about a 1cm border around the edge, rather than covering it completely. This prevents the cheese from oozing out as it melts and creates a cleaner look. Arrange the sliced cherry tomatoes attractively over the cheese. Then, lightly sprinkle a pinch of salt over the tomatoes. The salt helps to bring out the natural sweetness of the tomatoes, deepening their flavor.

Step 4

Now, cover the pan with a lid and cook for about 5-6 minutes, or until the cheese is fully melted. In my haste because the kids were hungry for snacks, the edges got a bit burnt, so I highly recommend using low heat and taking your time! 😊

Step 5

Once the cheese is sufficiently melted, it’s time to use a culinary torch to lightly char the cheese and tomato areas, infusing them with a smoky flavor. Torching them until golden brown really elevates the taste. (Personally, when I eat it alone, I find it delicious enough at this stage. I’m a bit intimidated using a torch at home since I’m not used to them, fearing a fire hazard. 😅)

Step 6

With a little help from my husband, the Ryu Soo-young-style tortilla pizza is finally complete! This finished pizza looks so appetizing.

Step 7

Because the tortilla was lightly oiled and crisped up, the texture is truly wonderful. When served warm with a drizzle of honey, the combination of sweet and savory is fantastic. We cleared two pizzas in no time! : ) I highly recommend you try making it too!
