  • 6 fresh shrimp
  • 2 cloves whole garlic
  • 19g fresh green onion (about 1/4 stalk)

From the 6 shrimp, leave 2 whole with shells on for garnish. Peel the remaining 4 shrimp. These peeled shrimp will be chopped to incorporate into the rice. You can use the back of a knife to mash them slightly, then finely mince them. If you have a cleaver, you can also use that to finely chop them. For the whole garlic cloves, mash them with the back of a knife and then mince them. This releases more garlic flavor.

Cut the green onion into a few long strands, then slice them thinly. Thinly sliced green onions will release a fragrant aroma and have a pleasant texture when stir-fried.
