Ryu Soo-young’s Galbi Chicken from ‘Stars’ Top Recipe’: Making the Perfect Sweet and Savory Soy Sauce Chicken
 
Chicken goes on sale, so I bought a pack! While a spicy Dakbokkeumtang might be perfect for adults, we chose this ‘Galbi Chicken or Fried Chicken?’ recipe from Ryu Soo-young to enjoy with the kids. I carefully followed the recipe from ‘Stars’ Top Recipe’ to make it exactly the same. This dish is a delightful blend of sweet and savory, with tender chicken coated in a rich galbi-inspired sauce, making it a hit for both children and adults. It’s perfect as a side dish for rice or as a special meal.
Main Ingredients- 1 pack chicken (approx. 1kg)
- 1 stalk green onion
- 1 handful garlic cloves (about 10-12 cloves)
- 1 piece ginger (about the size of one garlic clove)
Galbi Sauce- 1 Tbsp sugar
- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 6 Tbsp corn syrup (or rice syrup)
- A pinch of sesame seeds (for garnish)

Cooking Instructions
Step 1
First, thoroughly wash the chicken under running water. After washing, pat the chicken dry with paper towels to ensure a crispier coating and better sauce absorption.
 
Step 2
In a deep pan or wok, place the chicken pieces with the skin-side down. Sprinkle 3-4 pinches of salt evenly over the chicken for seasoning. Cook over medium-high heat for about 5 minutes, or until the skin is golden brown and slightly crispy. This step helps to seal in the chicken’s juices.
 
Step 3
Flip the chicken pieces over. Add the sliced ginger in between the chicken pieces; ginger is excellent for removing any unwanted gamey smell. Cover the pan with a lid and reduce the heat to medium-low. Let it cook for about 10 minutes, allowing the chicken to cook through. Keep an eye on it to prevent burning.
 
Step 4
Now, add the whole garlic cloves and the chopped green onion to the pan. Sprinkle 1 tablespoon of sugar over everything. Gently stir to combine the ingredients, coating them lightly with the sugar.
 
Step 5
Pour 3 tablespoons of soy sauce around the edges of the pan. Let the soy sauce sizzle and caramelize slightly on the hot pan; this adds a deep, rich flavor. Once caramelized, mix it thoroughly with the chicken and vegetables.
 
Step 6
Add 1 tablespoon of oyster sauce and 6 tablespoons of corn syrup. Stir-fry until the sauce thickens and coats the chicken, giving it a glossy finish. Cover the pan again and let it steam-cook on very low heat for 5 minutes. This allows the sauce to deeply penetrate the chicken, enhancing its flavor.
 
Step 7
Transfer the finished Galbi Chicken to a serving plate, arranging it attractively. Finally, sprinkle a pinch of sesame seeds over the top for added aroma and flavor. Your delicious Ryu Soo-young’s Galbi Chicken is now ready to be enjoyed with a side of warm rice!
