Main Ingredients

  • 1 can Salmon (canned)
  • 3 Potatoes (medium-sized)
  • 2 Cheongyang peppers
  • 1 Shiitake mushroom
  • 1 Green onion
  • 5 cloves Garlic, minced
  • 3 Tbsp Potato starch
  • 2 Tbsp Cooking oil
  • 1 Tbsp Red pepper flakes (Gochugaru)

Teriyaki Sauce

  • 3 Tbsp Soy sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Mirin (or cooking sake)

Cooking Instructions

Step 1

Peel the potatoes and cut them into bite-sized pieces, about 2-3 cm cubes. Soak the cut potatoes in cold water for about 10 minutes to remove excess starch. Then, boil them in water until they are about halfway cooked. Drain them thoroughly and coat evenly with potato starch, preparing them for frying.

Thinly slice the Cheongyang peppers diagonally. Remove the stems from the shiitake mushrooms and slice them into enjoyable pieces. Cut the green onion into long segments. Lightly coat all the prepared vegetables with potato starch as well. In a small pot, combine all the Teriyaki sauce ingredients (soy sauce, sugar, mirin) and simmer over low heat until the sauce reduces to about half its original volume. Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the potatoes coated with potato starch and pan-fry until golden brown and slightly crispy on all sides.

Once the potatoes are nicely fried, add the drained salmon (use only the salmon flesh) and the sliced vegetables to the same pan. Stir-fry them together until the salmon and vegetables are partially cooked. Then, add the fried potatoes back into the pan. Pour the pre-reduced Teriyaki sauce evenly over all the ingredients.

Gently stir all the ingredients in the pan with a spatula as they simmer together. Continue to cook until the sauce has thickened and coats the ingredients nicely. It’s best to simmer over medium-low heat to prevent burning and allow the flavors to meld beautifully.
