  • 2 large eggs

  • 1/4 oyster mushroom (sliced thinly along the grain)
  • 1 handful of enoki mushrooms (trimming the base and separating strands)
  • 2 pieces of green bell pepper (seeds removed and thinly sliced)

Spicy and Sweet Bibim Sauce
  • 3 Tbsp soy sauce (Jinkanjang)
  • 3 Tbsp red pepper paste (Gochujang)
  • 3 Tbsp red pepper flakes (Gochugaru, adjust for spice level)
  • 1 Tbsp sugar (adjust for sweetness)
  • 2 Tbsp minced garlic
  • 2 Tbsp vinegar (adjust for tanginess)
  • 2 Tbsp sesame oil
  • A pinch of toasted sesame seeds (optional)

Cooking Instructions

Step 1

First, bring a generous pot of water to a boil and add the medium wheat noodles. Cook them for about 1-2 minutes less than the time indicated on the package. Noodles that are slightly undercooked will retain a pleasant chewiness when mixed.

Step 2

Once the noodles are boiling, pour in about 1 cup of cold water to lower the temperature. This step helps to firm up the noodles, making them more resilient. Bring it back to a boil before reducing the heat.

Step 3

Gently stir the noodles occasionally to prevent them from sticking together. When the water re-boils, cook for another 2-3 minutes. Then, quickly drain the noodles and rinse them thoroughly under cold running water until completely cool. Ensure all excess water is drained by letting them sit in a colander; residual water can prevent the sauce from adhering well.

Step 4

Now, let’s make the delicious Bibim sauce. In a bowl, combine 3 Tbsp soy sauce, 3 Tbsp gochujang, 3 Tbsp gochugaru, 1 Tbsp sugar, 2 Tbsp minced garlic, 2 Tbsp vinegar, and 2 Tbsp sesame oil. Stir everything together with a spoon until well combined and the sauce has a thick consistency. Taste and adjust the sugar or vinegar according to your preference.

Step 5

Crack the 2 large eggs into a small bowl. Whisk them thoroughly with a fork or whisk to break up the egg yolks and whites, ensuring a smooth mixture.

Step 6

Heat a non-stick pan over medium-high heat and add a generous amount of cooking oil. Pour the whisked eggs into the hot pan, tilting the pan to spread the egg mixture thinly for an even crepe.

Step 7

As the top of the egg mixture starts to set and becomes mostly opaque, but still slightly moist and unset in places, carefully fold it in half or gently roll it up. Be careful not to overcook, as this can result in a dry texture.

Step 8

Remove the cooked egg crepe from the pan and let it cool slightly. Once cooled, slice it into your desired size or shape. Thinly julienned or cut into small squares both work well.

In the same pan, add a little more cooking oil if needed, and stir-fry the thinly sliced onion, carrot, oyster mushroom, enoki mushroom, and green bell pepper over high heat. Stir-fry quickly until the vegetables are slightly softened but still retain some crispness.

Place the thoroughly drained noodles into a large mixing bowl. Add about 2-3 tablespoons of the prepared Bibim sauce to start and mix well. Ensure the sauce coats the noodles evenly. Add more sauce if needed.

Prepare the fresh salmon by slicing it into bite-sized pieces. Serve it on a small plate with a side of wasabi and soy sauce to enhance its flavor.
