Easy Vienna Sausage and Vegetable Stir-fry Recipe for Beginners

Use up those Vienna sausages nearing their expiration date by making a delicious side dish with any leftover vegetables in your fridge! Although I didn’t have any green vegetables this time, the sausages and colorful vegetables soaked up the savory sauce perfectly, making it a delightful accompaniment to rice. For those who prefer a milder taste, I recommend tasting and adjusting the seasoning at the end to suit your palate!

Main Ingredients
  • Vienna sausages 240g
  • Onion 88g
  • Red bell pepper 64g

  • Grapeseed oil 2.5 Tbsp

Sausage and Vegetable Stir-fry Sauce
  • Oyster sauce 1 Tbsp
  • Ketchup 3 Tbsp
  • Oligosaccharide 1.3 Tbsp

Blanching the Sausages
  • Hot water 450ml

Cooking Instructions

Step 1

First, let’s make diagonal scores on the Vienna sausages. This helps them absorb the sauce better. (If your sausages already have scores, you can skip this step!)

Step 2

Place the scored Vienna sausages in a bowl and pour in 450ml of hot water. Soaking the sausages in hot water briefly helps to remove any impurities and reduce their saltiness. While they soak, you can prepare your vegetables to save time.

Step 3

Drain the blanched sausages from the hot water into a colander. Rinse them lightly under running water while gently tossing, then drain thoroughly to remove excess moisture. This step is important to prevent oil splattering when stir-frying.

Step 4

Dice the red bell pepper, yellow bell pepper, and onion into bite-sized pieces. Using colorful bell peppers will make your dish visually appealing.

Step 5

In a small bowl, combine 1 Tbsp oyster sauce, 3 Tbsp ketchup, and 1.3 Tbsp oligosaccharide. Mix well until smooth to create the delicious stir-fry sauce.

Step 6

Heat 2.5 Tbsp of grapeseed oil in a pan over medium heat. Add the drained Vienna sausages and stir-fry until the scored parts begin to open up slightly and they look golden brown and appealing.

Step 7

Once the sausage scores have opened, add the prepared onion and red and yellow bell peppers to the pan. Stir-fry over medium heat, ensuring the vegetables remain crisp-tender.

Step 8

When the vegetables are crisp-tender, pour the prepared sauce into the pan. Reduce the heat to medium-low and stir gently, allowing the sauce to coat the sausages and vegetables evenly. Cook until the sauce thickens slightly and becomes glossy. (Taste and adjust seasoning if needed by adding a pinch of soy sauce or salt.)

Step 9

Turn off the heat and sprinkle sesame seeds generously over the dish for a nutty aroma. Your delicious Sausage and Vegetable Stir-fry is now complete! This dish is also wonderful served over rice for a quick meal.
