  • Cauliflower, 200g
  • 1 medium Potato
  • Onion, 50g (about 1/4 of a medium onion)
  • Fresh Parsley, a pinch (for garnish)

Seasoning

  • Salt, 1/3 tsp (adjust to taste)

  • Sesame Seeds, a pinch

Tip for choosing fresh cauliflower: Look for florets that are tightly packed, white in color, have a round shape, and feel firm. Avoid cauliflower that looks fuzzy or has small leaves sprouting, as it might be past its prime.

Break the cauliflower into bite-sized florets. Wash them thoroughly under running water and drain them very well. Excess water can cause oil to splatter when cooking.

Peel the onion, wash it, and slice it thinly into half-moon shapes, about 0.5cm thick.

Peel the potato and slice it thinly into half-moon shapes, similar in thickness to the onion. Soak the sliced potatoes in cold water for about 5 minutes to remove excess starch; this prevents them from sticking together and improves their texture. Drain them well after soaking.

Heat 1-2 tablespoons of cooking oil in a pan over medium-high heat. Add the drained potato slices and stir-fry for about 10 seconds, just to lightly sear the surface. Once the potatoes start to look slightly translucent, add the sliced onions and continue to stir-fry.

Stir-fry the onions for another 10 seconds until they become slightly translucent. Then, add the drained cauliflower florets and stir everything together until well combined. Once the potatoes are golden brown and the cauliflower is tender-crisp, season with 1/3 teaspoon of salt and a pinch of black pepper. Finally, sprinkle in some sesame seeds and give it a final quick stir. This delicious sautéed cauliflower and potato dish is ready! For an extra flavor boost, you can add a little minced garlic along with the onions.
