Main Ingredients

  • 180g Shiitake mushrooms (fresh or rehydrated dried shiitake)
  • 1/2 Onion
  • A small amount of Carrot (approx. 1/4)
  • 1/4 Green bell pepper
  • 1/4 Red bell pepper

Seasoning & Condiments

  • 3 Tbsp Soy sauce
  • 1 Tbsp Oligosaccharide (or corn syrup, sugar)
  • 1/2 Tbsp Minced garlic
  • A pinch of Sesame seeds (for sprinkling)
  • A pinch of Black pepper (for sprinkling)
  • 2 Tbsp Perilla oil (wild sesame oil)

Cooking Instructions

Step 1

First, gently rinse the shiitake mushrooms under running water to remove any dirt. Be careful not to wash them too vigorously, as this can diminish their aroma. If using dried shiitake mushrooms, rehydrate them in warm water until soft, then squeeze out excess water.

Slice the shiitake mushrooms into bite-sized pieces, about 0.5cm thick. Slice the onion into strips. Julienne the carrot, green bell pepper, and red bell pepper. Combine all the prepared vegetables in a wide pan and add a very small amount of cooking oil. Sauté over medium heat until the vegetables just begin to soften. Once the vegetables start releasing their moisture, proceed to the next step.

After the vegetables have been lightly sautéed, add the soy sauce and black pepper. Stir-fry quickly to allow the seasoning to be absorbed. You can add a little more oil at this stage if needed; this helps the ingredients combine well and deepen the flavor. Maintain medium-low heat and stir to prevent burning.

Add the minced garlic and sauté for about 1 minute until fragrant. Next, stir in the oligosaccharide to add gloss and a touch of sweetness. Sprinkle in the sesame seeds for a nutty aroma. Gently mix everything to ensure the seasoning is evenly distributed among the ingredients.

Immediately after turning off the heat, generously drizzle in the 2 tablespoons of perilla oil. Stir everything together quickly with a spatula or chopsticks. The rich, aromatic flavor of the perilla oil will infuse the dish, completing its taste. Serve warm over a bowl of rice!
