Ingredients

- 1/2 can (approx. 200g) Spam, sliced
- 2 Tbsp cooking oil
- Pinch of salt (or sea salt)
- Pinch of black pepper
- Pinch of sesame seeds

Step 1
First, prepare the main ingredient: potatoes. Julienne them into thin strips. The thickness of your julienne cut will affect the cooking time and flavor absorption, so feel free to adjust it to your preference. Thinly cut potatoes cook faster and absorb seasoning better, while slightly thicker cuts will give you a more pronounced potato texture. Cut them to your liking!

Next, prepare the Spam. For a standard 200g can of Spam, we’ll use half of it. Slice the Spam; you should get about 4 slices. To prevent the Spam from breaking apart during cooking, it’s best to slice it a bit thicker than the julienned potatoes.
Step 3
Many recipes suggest soaking julienned potatoes in water to remove starch, which results in a drier texture. However, I personally enjoy a slightly ‘stickier’ consistency, so I’ll be cooking them immediately. If you prefer a fluffy, separated texture, soak the julienned potatoes in cold water for about 10 minutes, then drain them thoroughly before cooking.
Step 4
Heat about 2 tablespoons of cooking oil in a pan over medium heat. The amount of oil is important – too much or too little can affect the outcome. It’s better to start with less and add more if needed. Once the pan is lightly heated (avoid letting the oil smoke!), add the julienned potatoes first.
Step 5
Add the julienned potatoes to the pan and sprinkle in a pinch of salt (about half a teaspoon). If you don’t have seasoned salt, regular sea salt works just fine. Stir the potatoes occasionally over medium heat. In about 1-2 minutes, you’ll notice the potatoes softening and becoming slightly translucent as they release moisture. See how they’ve wilted down!
Step 6
Once the potatoes have softened and appear slightly translucent, add the sliced Spam. Stir-fry everything together. The cooking time will depend on the thickness of your potatoes, but typically, about 2 minutes over medium heat is sufficient for both the Spam and potatoes to cook through and meld their flavors beautifully.
Step 7
We’re almost done! In the final stage, add a pinch of black pepper for an extra layer of flavor. Then, increase the heat to high for a brief moment. Stir and toss the mixture constantly, almost like flipping a pancake, to evaporate any excess moisture. This step helps achieve a slightly crispier texture.
Step 8
Turn off the heat and finish by sprinkling sesame seeds over the dish. This adds a lovely nutty aroma and completes this delicious Sautéed Spam and Potato Noodles. Enjoy your meal!
