A Quick and Economical Side Dish Made from Broth Ingredients
Whenever I make broth for soups and stews, I always use anchovies and kelp. I often find myself with high-quality dried anchovies, like ‘Jukbang anchovies’, left over after making broth. Instead of discarding them, I decided to try making a relish with them. This recipe is perfect for using up those leftover broth ingredients, turning what would be waste into a flavorful side dish.
Ingredients- Dried Anchovies (for broth)
- Kelp (for broth)
- Anchovy sauce or Soy sauce
- Sesame oil
- Sesame seeds

Step 1
First, prepare the anchovies and kelp left over from making broth. Gently rinse the anchovies under running water. Remove the heads and the hard tail parts. It’s also important to remove the innards, which can cause a bitter taste. You can usually find these along the gut cavity. Removing them ensures a clean, pleasant flavor. For the kelp, lightly rinse it to remove any excess salt or grime, but try not to wash away too much of the white powder, as it contains beneficial nutrients. Once rinsed, slice the kelp into thin strips. This makes it easier to mix with the other ingredients and absorb the seasoning.

Now, let’s prepare the sliced kelp. If you’ve already used the kelp for broth and have some remaining, it’s time to cut it into a more manageable size for the relish. Take the kelp and slice it into thin strips, about 0.5 cm wide. You can adjust the thickness to your preference, but thinner strips will allow the seasoning to penetrate better, resulting in a more flavorful dish. These thinly sliced kelp strips will add a delightful chewy texture and umami to your anchovy relish.

This is the final step where we bring all the ingredients together to create a delicious anchovy relish! In a mixing bowl, combine the prepared anchovies and the thinly sliced kelp strips. Add your preferred seasoning, such as anchovy sauce or soy sauce, to taste. Anchovy sauce will provide a deeper, richer umami flavor. Next, drizzle in a good amount of sesame oil for its nutty aroma and flavor. Finally, sprinkle generously with toasted sesame seeds (or ground sesame seeds) for extra texture and a beautiful finish. Gently mix everything together with your hands, being careful not to break the anchovies too much. You want to ensure all ingredients are evenly coated with the seasoning. Once everything is well combined, your flavorful anchovy relish is ready to be enjoyed! It’s delicious immediately, but allowing it to chill in the refrigerator for a short while will help the flavors meld together even more beautifully.
