Cooking Instructions
Step 1
Prepare all ingredients. Using fresh shiitake mushrooms provides a more vibrant texture, while rehydrated dried shiitake mushrooms can add a deeper flavor.
Step 2
Cut off and discard the tough stem ends of the shiitake mushrooms. Gently brush off any dirt or impurities from the mushroom caps with a paper towel for clean preparation. You can save the removed stems to make broth later.
Step 3
Wash and peel the onion and carrot, then slice them into thin julienne strips. Finely chop the green onion. Slicing the vegetables into similar thicknesses ensures they cook evenly.
Step 4
In a bowl, combine 1.5 Tbsp soy sauce, 1.5 Tbsp oligosaccharide, 1 Tbsp oyster sauce, 1/3 Tbsp starch, and 3 Tbsp water. Mix well to create the sauce. The type of starch used may slightly affect the consistency, but potato starch works well.
Step 5
Heat 1-2 Tbsp of cooking oil in a pan over medium-low heat. Add the chopped green onions and stir-fry slowly until fragrant and lightly golden, creating aromatic green onion oil. Infusing the oil with the green onion’s flavor is key.
Step 6
Once the green onions are golden and aromatic, add the prepared shiitake mushrooms, carrots, and onions to the pan. Stir-fry quickly over high heat, ensuring the ingredients are coated with oil.
Step 7
When the vegetables have slightly softened, pour the prepared sauce mixture around the edges of the pan. Quickly toss everything together to coat evenly with the sauce before it burns. Turn off the heat as soon as the sauce thickens.
Step 8
With the heat turned off, drizzle in 1 Tbsp of sesame oil for added flavor and aroma.
Step 9
Finally, add 1 Tbsp of sesame seeds (whole or crushed) and gently toss to combine. The sesame seeds add a nutty flavor and texture.
Step 10
Give everything a final light toss to ensure all ingredients are well mixed. Your delicious stir-fried shiitake mushrooms are now complete! Serve over warm rice for a satisfying meal.
