Shiitake mushrooms are particularly known for their rich aroma and delightfully chewy texture. They are versatile in cooking, but today, we’ll be making them as a simple stir-fried side dish! Seasoned only with salt, this dish highlights the chewy and mild flavor of shiitake mushrooms. Let’s make this irresistible mushroom stir-fry!

Main Ingredients
  • 7 Shiitake mushrooms (choose large, fresh ones)
  • 1/4 Onion (thinly sliced)
  • A small amount of Carrot (thinly sliced)
  • 1 Tbsp Cooking oil
  • 1 Tbsp Sesame oil (for stir-frying and finishing)
  • 3 Tbsp Water (for cooking mushrooms)

Seasoning
  • 1/3 Tbsp Bamboo salt (or 1/2 Tbsp soup soy sauce)
  • 1 Tbsp Sesame oil (for finishing aroma)
  • 1 Tbsp Toasted sesame seeds (for nutty flavor)

Cooking Instructions

Step 1

First, prepare the shiitake mushrooms. Trim off the tough, woody stem ends. Gently rinse the underside of the mushroom caps under running water to remove any dirt or debris, then pat them thoroughly dry with paper towels. Slice the dried mushrooms into 6-7 pieces each. Cleaning the underside ensures a cleaner, more pleasant dish.

Step 2

Peel and thinly slice the onion. Wash and peel the carrot, then slice it into thin strips similar in size to the onion slices. Cutting the vegetables to a uniform size will help them cook evenly.

Step 3

Heat a pan over medium heat and add 1 Tbsp of cooking oil and 1 Tbsp of sesame oil. Add the sliced carrots and onions and stir-fry until the vegetables become slightly translucent and fragrant.

Step 4

Once the onions start to turn translucent, add all the prepared shiitake mushrooms to the pan. Pour in 3 Tbsp of water. Shiitake mushrooms have low moisture content, so adding a little water helps them cook without burning and keeps them tender.

Step 5

Cover the pan with a lid and let it cook over medium heat for about 2 minutes. Steaming the mushrooms with the lid on will deepen their flavor and make them more tender.

Step 6

After 2 minutes, remove the lid. Season with 1/3 Tbsp of bamboo salt (or 1/2 Tbsp of soup soy sauce). Add the remaining 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds, and quickly toss everything together. Taste and adjust seasoning if needed. For an extra umami boost, you can substitute the bamboo salt with about 1/2 Tbsp of oyster sauce. Turn off the heat immediately after mixing well.

Step 7

Your fragrant and delightfully chewy stir-fried shiitake mushrooms are ready! This healthy and delicious dish is perfect as a side for warm rice or as a bento box addition. Enjoy your meal!
