Cooking Instructions
Step 1
First, let’s make the radish side dish (Munamul). Wash the radish, peel it, and then cut it into thin, long matchsticks about 0.3cm thick.
Step 2
Place all the julienned radish into a pot.
Step 3
Add 1/2 cup of water to cover the radish, season lightly with salt (or soy sauce), and drizzle in about 1/2 Tbsp of cooking oil. Cover the pot and steam over medium-low heat for about 5-7 minutes until the radish becomes translucent and slightly tender but still retains a slight crispness. Be careful not to overcook, as it can become mushy.
Step 4
Once the radish is cooked to your liking, add the minced garlic, 1 Tbsp of sesame oil, and a pinch of sesame seeds. Gently mix everything together and cook for another moment to combine the flavors. Turning off the heat and letting it rest allows it to soften further.
Step 5
Now, let’s prepare the stir-fried zucchini with dried shrimp paste. Slice the zucchini thinly into half-moon shapes. Slice the onion and carrot into similar thicknesses.
Step 6
Heat a pot with a little cooking oil and sauté the minced garlic until fragrant. Add the sliced zucchini, onion, and carrot, and stir-fry together until the vegetables begin to turn translucent. When the vegetables are slightly softened, add 1 Tbsp of minced dried shrimp paste to season. Adjust the amount of shrimp paste based on its saltiness.
Step 7
Once the vegetables are cooked to your preference, stir in 1 Tbsp of sesame oil and a pinch of sesame seeds for extra fragrance. Cook briefly, then turn off the heat and transfer to a serving dish.
Step 8
Next is the stir-fried anchovies. Heat 1 Tbsp of cooking oil in a pan and sauté the minced garlic over low heat until golden and fragrant.
Step 9
Add the anchovies to the pan and stir-fry over medium heat, stirring gently to prevent them from breaking. Cook until the anchovies are slightly crispy. This helps remove any fishy smell.
Step 10
Once the anchovies are sufficiently stir-fried, add 3 Tbsp of corn syrup (or oligosaccharide) and quickly mix to coat the anchovies evenly, creating a glossy finish. Be careful not to burn the syrup. Finally, add 1 Tbsp of sesame oil and a pinch of sesame seeds, and mix once more.
Step 11
Transfer the delicious stir-fried anchovies to a nice plate. They are perfect with rice!
Step 12
Finally, it’s time for the stir-fried dried shrimp. Heat a little cooking oil in a pan and sauté the minced garlic over low heat until fragrant.
Step 13
Once the garlic is cooked, add the cleaned dried shrimp and stir-fry over medium-low heat. When the dried shrimp are slightly cooked, add 2 Tbsp of corn syrup (or oligosaccharide) and stir to coat them evenly.
Step 14
When the dried shrimp and sauce are well combined, add 1 Tbsp of sesame oil and a pinch of sesame seeds at the end. Mix briefly.
Step 15
The chewy and flavorful stir-fried dried shrimp are now ready. Just looking at them makes your mouth water!
Step 16
Enjoy a hearty and delicious home-cooked meal with these four thoughtfully prepared side dishes!
