  • 200g Well-fermented Kimchi

First, prepare the kimchi by removing the core and chopping it finely. Lightly drain the tofu by placing it in a sieve or pressing it with a clean cloth to remove excess water. Then, mash the tofu finely using your hands or a fork until there are no large lumps. In a bowl, combine the mashed tofu, chopped kimchi, pancake mix (or all-purpose flour), and 1 egg. If the batter is too thick, gradually add water to reach your desired consistency. You can also add a pinch of salt or sugar depending on the kimchi’s saltiness. Mix everything well until the batter is evenly combined.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Ladle one portion of the batter onto the hot pan and spread it thinly into your desired size. Fry until golden brown and crispy on both sides. It’s important to cook slowly and patiently so the edges become crisp and the inside is cooked through. Once one side is sufficiently browned and the edges are crisp, carefully flip it over and cook the other side until golden brown. Add more oil in the middle if needed.
