Ingredients

  • 1/3 bundle mustard greens (approx. 200g)
  • 1 tsp salt (for blanching)
  • 1 Tbsp Doenjang (fermented soybean paste)
  • 1 Tbsp Ssamjang (spicy soybean paste)
  • 1 tsp minced garlic
  • 1 Tbsp plum extract (or syrup)
  • 1 tsp honey (or corn syrup)
  • 1 tsp sesame oil
  • 1 tsp toasted sesame seeds

Cooking Instructions

Step 1

Prepare the fresh mustard greens. Trim any tough stem ends and wash the leaves thoroughly under running water, keeping the leaves intact. Since they will be blanched, you don’t need to dry them completely.

Step 1

Step 2

Bring a large pot of water to a rolling boil. Once boiling, add 1 tsp of salt. Submerge the tougher stem parts of the greens into the boiling water first and blanch for about 20-30 seconds. This helps keep the stems crisp.

Step 2

Step 3

Next, add the tender leafy parts and blanch for just another 10-20 seconds. Mustard greens cook very quickly, so be careful not to overcook them.

Step 3

Step 4

Remove the blanched leafy parts and immediately rinse them under cold running water to cool them down. This step helps maintain the vibrant green color and a crisp texture.

Step 4

Step 5

Rinse the stem parts under cold water as well. Once cooled, gather the blanched greens with your hands and squeeze out as much water as possible. Excess water can make the seasoned greens taste bland.

Step 5

Step 6

Place the squeezed greens in a mixing bowl and begin seasoning. Ensure the greens are well-drained. Add 1 tsp of minced garlic; the garlic aroma will enhance the overall flavor of the greens.

Step 6

Step 7

Add 1 Tbsp of Doenjang and 1 Tbsp of Ssamjang. Then, mix in 1 Tbsp of plum extract, 1 tsp of honey (or corn syrup), 1 tsp of sesame oil, and 1 tsp of toasted sesame seeds. Gently toss the ingredients together with your hands until evenly coated. Mix gently to avoid bruising the greens and losing their texture.

Step 7

Step 8

Your savory and delicious seasoned mustard greens (Gatnamul) are ready! The harmonious blend of savory Doenjang, a hint of sweetness, and the signature slight pungency of the mustard greens is truly appetizing. Enjoy it with warm rice or use it as a delightful ingredient for bibimbap!
