White Seasoned Bean Sprouts Main Ingredients
- Bean sprouts approx. 170g
- Minced garlic 0.2 Tbsp (approx. 1/5 tsp)
- Sesame oil 1 Tbsp
- Anchovy sauce 0.5 Tbsp (approx. 1/2 tsp)
- Toasted sesame seeds (for sprinkling)
For Boiling Bean Sprouts
- Salt 0.2 Tbsp (approx. 1/5 tsp)
- Water 150ml (approx. 2/3 cup)

Cooking Instructions
Step 1
First, prepare approximately 170g of bean sprouts. Place them in a clean bowl and add enough water to fully cover the sprouts. Gently swirl them with your hands, changing the water 3-4 times to wash them thoroughly. Drain the washed bean sprouts in a colander.
Step 2
Transfer the drained bean sprouts to a pot. Add 0.2 Tbsp of salt and 150ml of water. Cover the pot with a lid and place it over high heat on the stove until it comes to a boil.
Step 3
Once steam starts rising from under the lid, reduce the heat to slightly lower than medium heat. Keep the lid on and cook the bean sprouts for about 7-8 minutes. It’s crucial not to open the lid during cooking to prevent any fishy smell from developing. Cooking with the lid on helps to retain the fresh, clean flavor.
Step 4
After about 7 minutes of cooking, turn off the heat and let the bean sprouts steam with the lid on for another 2 minutes. This steaming process helps to make the bean sprouts crispier and more flavorful. After steaming, remove the lid.
Step 5
Carefully scoop the cooked bean sprouts out of the pot into a separate bowl. Gently toss them with a spoon or chopsticks to let the residual heat evaporate. This step prevents the bean sprouts from becoming mushy.

Once the bean sprouts have cooled slightly, it’s time to season them. Add 0.5 Tbsp of anchovy sauce, 1 Tbsp of sesame oil, and 0.2 Tbsp of minced garlic to the bowl. It’s a good tip to start with a little less anchovy sauce than recommended, taste, and then add more if needed. Gently mix the bean sprouts with the seasonings.
Step 7
Taste the seasoned bean sprouts. If the seasoning is not to your liking, add a little more salt or anchovy sauce to adjust the flavor to your preference. Remember to reduce the seasoning amounts if you prefer a milder taste.
Step 8
