Simple and Delicious Stir-Fried Potato! A Savory Delight!
I made a simple side dish for breakfast using stir-fried potato noodles. The enticing aroma of cooking oil fills the kitchen, and the resulting savory flavor is an added bonus. This is a side dish that promises a delightful culinary experience.
Ingredients- 5 Potatoes (smaller than fist-sized)
- 1 Onion
- 1 Carrot
- 3 Tbsp Cooking Oil
- 2 tsp Salt

Step 1
First, peel the potatoes and carrot using a peeler. Select an onion that is similar in size to the potatoes and peel it as well. Using smaller ingredients helps to shorten cooking time and ensures even cooking.

Once peeled, thinly slice the potatoes, then julienne them into approximately 2-3mm thick strips. If you find julienning difficult, a mandoline slicer can make the process faster and easier. Cutting them thinly prevents them from breaking apart during stir-frying and preserves a pleasant texture.

Place the julienned potatoes in a colander and rinse them under cold running water to remove excess starch. This step prevents the potato strips from sticking together when cooked, resulting in a cleaner texture. After rinsing, thoroughly pat the potatoes dry with paper towels or a clean kitchen cloth.

Julienne the carrot and onion just as finely as you did the potatoes. Matching the thickness of the vegetable strips ensures they cook at a similar rate, leading to a more harmonious flavor profile.

Now, it’s time to stir-fry the dried potato noodles. Heat a generous amount of cooking oil (about 3 tablespoons) in a pan over medium-low heat. Once the oil is shimmering, add the potato strips and gently stir them with chopsticks or a wooden spatula. They won’t break apart easily at this stage, so feel free to mix them around. When the potatoes begin to turn slightly translucent, add 1 teaspoon of salt and continue to stir-fry.

Reduce the heat to low and continue to cook gently, monitoring the potatoes’ doneness. Cooking on high heat can burn the outside while leaving the inside undercooked, so be mindful of the temperature.

Add the julienned onion and carrot to the pan and stir-fry them with the potatoes. Keep the heat on low. The moisture released from these vegetables will help prevent sticking and their natural sweetness will complement the potatoes.

Add the remaining 1 teaspoon of salt to season the dish. You can adjust the saltiness according to your preference.

As the onion and carrot soften and their moisture evaporates, the potato strips may start to slightly stick to the bottom of the pan. This is the perfect opportunity to develop a savory, toasted flavor! Spread the potato mixture evenly across the pan and let it sit undisturbed for about 2 minutes. The key here is to allow a light browning, almost like a crust.

After 2 minutes, flip the potato mixture. Repeat this process a few times. This gentle scorching on the bottom creates delicious browned bits, significantly enhancing the savory taste of the stir-fried potatoes. Cooking on high heat can cause the potatoes to burn quickly, so it’s best to keep the heat at medium or lower.
