Savory and Moist Gimbap Pancakes from Leftover Gimbap
Don’t Throw Away Leftover Gimbap! Make Simple Gimbap Pancakes.
Leftover gimbap that’s been refrigerated tends to become hard and unappetizing, right? Don’t worry! By coating it in egg and pan-frying it, you can enjoy a moist, savory, and delicious treat. This recipe transforms leftover gimbap into a delightful snack that both kids and adults will love.
Main Ingredients- 1 roll of leftover gimbap
- 2 eggs
- Cooking oil, for frying
Cooking Instructions
Step 1
I had more than a roll of cheese gimbap left over from making it for the kids the previous day. It was a shame to throw away, and a bit disappointing to eat as is because it had hardened.
Step 2
For one roll of gimbap, about 2 eggs are sufficient. Crack the 2 eggs into a bowl and whisk them thoroughly until the yolks and whites are well combined. It’s important to beat the eggs until there are no lumps.
Step 3
Once the egg mixture is well beaten, carefully dip the hardened gimbap into the egg wash, ensuring it’s fully coated. This egg coating will help prevent the gimbap from falling apart during cooking and adds a wonderful moistness and savory flavor.
Step 4
Heat a frying pan over medium-low heat with a little cooking oil. Once the pan is warm, carefully place the egg-coated gimbap onto the pan. It’s crucial to cook the gimbap pancake over medium-low or low heat. If the heat is too high, the egg coating can burn before the gimbap inside is warmed through and becomes moist. Gentle cooking allows the inside to heat up and the egg to cook softly.
Step 5
After about 2-3 minutes, when the bottom side is golden brown and cooked, carefully flip the gimbap using a spatula. Cook the other side until it’s also golden brown and slightly crispy. This will complete your delicious gimbap pancake.
Step 6
Transfer the well-cooked gimbap pancake to a plate, cutting it into bite-sized pieces if desired. Enjoy it warm! The egg coating makes it extra moist and savory. It’s a fantastic way to use up leftover gimbap!
