This is Gondre-bap, a healthy and nutritious rice dish made with dried gondre (Korean thistle). This recipe utilizes an electric pressure cooker for maximum convenience. Instead of plain water, using broth for the cooking liquid imparts a beautiful sheen to the rice and enhances its chewy texture. The traditional method of rinsing the rice and letting it drain slowly on a sieve also contributes to a superior, sticky rice texture. Main Ingredients- 100g Dried Gondre
- 4 cups Rice
Cooking Instructions
Step 1
First, prepare the dried gondre. Soak the dried gondre in water for at least 3 hours. You can soak it for longer if you prefer an even softer texture.

Once the dried gondre is well-soaked, boil it in rapidly simmering water. Dried gondre can be quite tough, so simply soaking it may not be enough to soften it. Boiling it ensures a tender and pleasant texture.
Step 3
Rinse the rice thoroughly, then place it in a sieve to drain slowly. This ancient technique helps create wonderfully chewy rice. Transfer the drained rice to your rice cooker pot. On top of the rice, arrange the soaked and boiled gondre. Add the cooking liquid (broth is recommended for extra flavor and sheen) until it just barely covers the gondre. Be mindful that the rice is already hydrated from soaking and the gondre also contains moisture.
