- Sesame oil (for aroma)
- Mushroom powder 1 tsp (optional, for deeper umami)
- Perilla seed powder 2 Tbsp (for nuttiness and nutrition)
Cooking Instructions
Step 1
Place the soft tofu in a sieve to drain excess water gently. This will result in a clearer broth.
Step 2
Pour rice water into a deep pot or earthenware pot and bring to a boil over medium heat. Rice water adds a savory and deep flavor to the broth.
Step 3
In a small bowl, combine soy sauce, anchovy extract, chopped green onion, sesame seeds, sesame oil, mushroom powder, and perilla seed powder to make a delicious seasoning sauce. Once the water is boiling, add the cleaned oysters and cook briefly. Be careful not to overcook the oysters, as they can become tough.
Step 4
Carefully add the prepared soft tofu to the pot. Handle the tofu gently to prevent it from breaking apart.
Step 5
Stir the prepared seasoning sauce into the broth to adjust the flavor. You can add more soy sauce or salt to your preference. Add the chopped Korean chili pepper at this stage for a hint of spiciness.
Step 6
Simmer the soup for a brief moment to allow all the ingredients to meld. Once the broth comes to a boil, reduce the heat to low and let it simmer for another 1-2 minutes, allowing the flavors to fully infuse into the soup. Garnish with fresh green onions and sesame seeds to complete your delicious Perilla Seed Oyster Tofu Soup.
