Thanks to the gochujang (Korean chili paste) and doenjang (fermented soybean paste), this pancake is deliciously savory and flavorful without needing any other ingredients. It’s a fantastic side dish or a satisfying snack when you’re feeling peckish. The gochujang and doenjang also help cut through any richness, making it less greasy. Main Ingredients- About 70g of Korean chives (a generous handful)
- 1/2 medium onion
Cooking Instructions
Step 1
First, thoroughly wash the Korean chives under running water and pat them dry. Then, finely chop them into about 1 cm pieces. Cutting them too long might cause them to fall out of the batter, so aim for a manageable size.
Step 2
Peel the onion, wash it clean, and thinly slice it into shreds. The sweetness of the onion will further enhance the flavor of your Buchu Jangtteok.
Step 3
Now, let’s make the batter. In a bowl, combine 1 cup of flour and 3/4 cup of water. Whisk them together until smooth, ensuring there are no lumps. Next, add 1 Tbsp of gochujang and 1/2 Tbsp of doenjang, mixing well so they dissolve without clumps. Finally, add the prepared chives and onion to the batter. Stir everything together with a spoon until the chives and onion are evenly distributed throughout the batter. Make sure to mix well so all ingredients are incorporated.
Step 4
Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the pan is hot, ladle about a portion of the batter onto the pan, shaping it into your desired size, usually round. Pan-fry until golden brown on both sides. Be careful not to overheat the pan, as the outside might burn while the inside remains uncooked. It’s best to cook slowly over medium-low heat. Pancakes that are nicely browned are not only visually appealing but also taste better. Serve them hot right after cooking for the most delicious experience!
