Golden Recipe for Delicious Perilla Leaf Seasoning

Main Ingredients- 30 fresh perilla leaves
Perfectly Balanced Seasoning- 3 Tbsp soy sauce
- 0.5 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- 0.5 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Cheongyang pepper (seeds removed and minced)
- 2 red chili peppers (seeds removed and minced)
- 3 Tbsp chopped green onion (white parts preferred)
- 1 Tbsp toasted sesame seeds
- 3 Tbsp soy sauce
- 0.5 Tbsp gochugaru (Korean chili flakes, adjust to taste)

Cooking Instructions
Step 1
Start by thoroughly cleaning the fresh perilla leaves. In a large bowl, add 5 cups of water and 1 tablespoon of vinegar. Soak the perilla leaves in the vinegar water for about 5 minutes; this helps to remove any impurities effectively. Afterwards, rinse the leaves under running water, washing both sides carefully. Gently shake off excess water or place them in a colander to drain as much as possible.

If the stems of the perilla leaves are a bit long, it’s best to trim them for a neater presentation and better flavor absorption. Use kitchen scissors to cut off the stem ends to a suitable length. This step ensures the seasoning penetrates the leaves well and makes them easier to store.

Prepare the vegetables that will add depth of flavor to your seasoning. Slice the Cheongyang pepper in half, carefully remove the seeds, and then finely mince it. Do the same for the red chili peppers. Finely chop the green onion, focusing on the white parts, to get about 3 tablespoons. If you have scallions, finely chopping about 2 stalks can add a wonderful aroma.

Stir everything together with a spoon, ensuring there are no clumps and that all ingredients are well incorporated.

This is the stage where you layer and season the perilla leaves. In your storage container, place two perilla leaves at a time. Then, spoon a moderate amount of the prepared seasoning over the leaves, spreading it evenly. Repeat this process, layering perilla leaves and seasoning, until all ingredients are used. While you can enjoy them immediately, they taste even better after about a week of marinating in the refrigerator. The flavors will deepen and meld beautifully.
