  • 1 can of tuna (approx. 150g)
  • 1 stalk of green onion

Cooking Instructions

Prepare about 1 bowl (approx. 150g) of kimchi. Using aged or well-fermented sour kimchi will give the stew a deeper flavor.

Add about 1 ladleful of kimchi juice along with the kimchi. The juice adds a savory depth to the stew.

Add 0.5 to 1 tablespoon of sugar, adjusting based on how sour your kimchi is. Sugar helps to mellow the sourness and enhances the umami. Sauté the kimchi over medium heat until it becomes slightly reduced and tender, until it looks appealing and softens. This step is crucial for developing a deep flavor in the broth.

Once the kimchi is well sautéed, pour in 400-450ml of anchovy-kelp broth. Bring it to a simmer over medium-low heat for about 5 minutes. You can also use rice water or just kelp broth.

After 5 minutes, open the can of tuna and add the entire contents, including the oil. Don’t squeeze out all the oil; the tuna oil adds a savory richness to the broth.

Let it simmer for about 2 more minutes after adding the tuna. At this point, slice 1 stalk of green onion diagonally. If desired, you can also add sliced enoki mushrooms or tofu cut into bite-sized pieces for a more substantial stew.
