Introducing a recipe for the hearty and beloved Korean side dish, anchovy stir-fry, which is always a delight to eat. This simple yet deeply flavorful anchovy stir-fry will make your dining table even more vibrant.
Main Ingredients- 300g of anchovies for braising (choose medium-sized, firm anchovies)
- 4 cloves of garlic (thinly sliced into rounds)
- 2 Korean cucumbers (seeds removed and sliced into 1cm thick pieces. Can substitute with Cheongyang chili peppers for a spicier kick)
Seasoning Ingredients- 1.5 Tbsp soy sauce (adjust according to the saltiness of the anchovies)
- 1 Tbsp plum extract (adds sweetness and shine)
- 1/2 Tbsp ginger syrup (removes any fishy odor and enhances flavor)
- 1/3 Tbsp sesame oil (for a nutty finish)
- 1.5 Tbsp soy sauce (adjust according to the saltiness of the anchovies)
- 1 Tbsp plum extract (adds sweetness and shine)
- 1/2 Tbsp ginger syrup (removes any fishy odor and enhances flavor)
- 1/3 Tbsp sesame oil (for a nutty finish)
Cooking Instructions
Step 1
Lightly grease a heated pan with cooking oil. Add the thinly sliced garlic and stir-fry over medium-low heat. It’s important to cook the garlic slowly until it turns golden brown and releases its fragrant oil. Be careful not to burn it.
Step 2
Once the garlic oil has infused, add the prepared anchovies and stir-fry quickly over high heat for about 2-3 minutes, shaking the pan (‘sheik-sheik’) to remove any fishy smell and make them more savory. Be careful not to overcook, as this can make the anchovies tough.
Step 3
Push the anchovies to one side of the pan and add the soy sauce, plum extract, and ginger syrup. Let the sauce simmer briefly. Then, add the sliced Korean cucumbers and stir-fry everything together until well combined. If you prefer a spicier dish, use Cheongyang chili peppers instead of Korean cucumbers. Adjust the amount of soy sauce based on the saltiness of your anchovies.
Step 4
Once all ingredients are well mixed, turn off the heat. Drizzle in the sesame oil for a final nutty aroma. To prevent the anchovies from becoming too hard from residual heat, add the sesame oil after turning off the stove and mix gently. Your delicious, glossy anchovy stir-fry is now ready!
