A Crowd-Pleasing Braised Baby Potato Dish, Perfect for Snacks or Side Dishes
Transform simple baby potatoes into an irresistible dish with a perfect balance of savory and sweet flavors. These tender, melt-in-your-mouth potatoes coated in a glossy glaze are sure to become a family favorite, whether served as a side, a snack, or even a delicious accompaniment to drinks.
Main Ingredients- 20 baby potatoes (small potatoes)
Seasoning Ingredients- 5 Tbsp soy sauce
- 5 Tbsp mirin (or cooking wine)
- 1 Tbsp anchovy sauce (optional, for umami)
- 4 Tbsp corn syrup (or oligodang/oligosaccharide)
- Pinch of black pepper
- Pinch of red pepper flakes (optional)
- 5 Tbsp soy sauce
- 5 Tbsp mirin (or cooking wine)
- 1 Tbsp anchovy sauce (optional, for umami)
- 4 Tbsp corn syrup (or oligodang/oligosaccharide)
- Pinch of black pepper
- Pinch of red pepper flakes (optional)
Cooking Instructions
Step 1
First, thoroughly scrub the baby potatoes under running water to remove any dirt. Using a clean scrub brush will help ensure they are spotless, as we’ll be cooking them with their skins on.
Step 2
Place the cleaned baby potatoes in a pot and cover them with enough water to fully submerge. Bring to a boil over high heat. Cook until the potatoes are tender enough to be easily pierced with a chopstick. Discard this first cooking water; it helps remove excess starch from the potatoes.
Step 3
Return the potatoes to the pot and add just enough water to come halfway up the sides of the potatoes. Add 5 Tbsp soy sauce, 5 Tbsp mirin, 1 Tbsp anchovy sauce (if using), and a pinch of black pepper. (If you don’t have anchovy sauce, you can substitute with Korean soup soy sauce for a similar umami boost. For an even richer flavor, consider using dashi or anchovy broth instead of water.) Braise over medium heat, allowing the potatoes to absorb the flavors.
Step 4
Once the liquid begins to reduce and thicken slightly, lower the heat to low. Stir in 4 Tbsp corn syrup for sweetness and a pinch of red pepper flakes for a hint of spice. (Adjust the amount of corn syrup to your preference. If serving to children, you can omit the red pepper flakes or use a very small amount.)
Step 5
Finally, continue to simmer gently over low heat until the sauce has thickened and coats the potatoes nicely. Once the glaze is glossy and coats the potatoes, turn off the heat. Garnish with sesame seeds if desired. These braised baby potatoes are delicious served warm or at room temperature!
