Main Ingredients- 700g julienned burdock root

Step 1
If you’ve purchased pre-julienned burdock root, it might be soaked in vinegar water to prevent browning. In that case, drain the vinegar water, rinse the burdock root with fresh cold water, and let it soak for about 5 minutes. After soaking, drain thoroughly using a colander. This step helps to reduce any bitterness and maintain a crisp texture.
Step 2
Heat a little cooking oil in a pan over medium-low heat. Add the drained burdock root strips and stir-fry until they become tender and slightly golden brown, approximately 5-7 minutes. It’s important to stir-fry them sufficiently so that the moisture evaporates and the chewy texture develops.
Step 3
Once the burdock root is partially cooked, add the soy sauce (3 Tbsp), mirin (2 Tbsp), sugar (1 Tbsp), corn syrup (2 Tbsp), and sesame oil (1 Tbsp). Stir well to combine. To prevent the sauce from burning, it’s helpful to briefly turn off the heat before adding the seasonings, then turn it back on. This allows the flavors to meld evenly. Continue to simmer over low heat, allowing the sauce to be absorbed by the burdock root. Stir occasionally to ensure nothing sticks to the bottom of the pan.
Step 4
When the sauce has thickened and coats the burdock root with a glossy sheen, turn off the heat. Sprinkle with toasted sesame seeds for garnish. This braised burdock root is a wonderful addition to kimbap (Korean seaweed rice rolls) or simply enjoyed as a delicious side dish with rice. Its chewy texture and savory-sweet flavor are sure to make you want a second bowl!
