Main Ingredients- 4 pieces semi-dried flatfish (approx. 450g)
- 1/3 medium onion
- 1 green chili pepper
- 1/2 red chili pepper
- 1/4 stalk green onion
- 1 stalk scallion
Savory & Sweet Soy Glaze- 2 Tbsp soy sauce
- 1 Tbsp mirin (rice wine)
- 1 Tbsp plum extract
- 1/2 Tbsp minced garlic
- 1/2 Tbsp sesame oil
- Pinch of black pepper
- 1 Tbsp oligosaccharide
- 2 Tbsp soy sauce
- 1 Tbsp mirin (rice wine)

Cooking Instructions
Step 1
First, prepare the star of the dish: the semi-dried flatfish. Get 4 pieces of flatfish, each about the size of your palm (approximately 450g).
Step 2
Gently rinse the flatfish under cold running water, then thoroughly pat it dry with paper towels. Once dry, make 2-3 diagonal slits on each side of the fish. This will help the marinade penetrate evenly.
Step 3
Lightly sprinkle salt onto the slitted flatfish to season it. This pre-seasoning helps to remove any fishy odor and allows the fish to absorb flavor. (Adjust the amount of salt to your preference.)
Step 4
Peel the 1/3 onion and slice it into thin strips, about 0.5 cm thick.

Finely mince about 2 tablespoons of green onion. This will be added to the sauce for extra flavor. (Using mostly the white parts is recommended.)

Remove the stem from 1 green chili pepper and slice it thinly. This will add a refreshing spiciness to the dish.

Slice the 1/2 red chili pepper and the scallion diagonally or thinly. These will add color and enhance the overall appeal of the braised flatfish.

Now, let’s make the incredible sauce that will bring this braised flatfish to life! In a bowl, combine the following ingredients in order: – 2 Tbsp soy sauce – 1 Tbsp mirin – 1 Tbsp plum extract – 1 Tbsp oligosaccharide – 1/2 Tbsp sesame oil – 1/2 Tbsp minced garlic – Pinch of black pepper

Add all the sauce ingredients to the bowl and mix well with a spoon or whisk until thoroughly combined. You’ll have a savory and subtly sweet, mouth-watering glaze ready to go.

Heat a generous amount of cooking oil in a frying pan over medium-high heat. Place the seasoned flatfish in the pan and fry until golden brown and slightly crispy on both sides. While delicious on its own, we’re going to braise it in our soy sauce glaze today. (Frying until crispy helps the fish maintain its shape when braised.)
Step 11
Move the crispy fried flatfish to one side of the pan, or temporarily set it aside on a plate. Add the sliced onion, green chili, and red chili to the pan and sauté briefly until fragrant. Once the vegetables are slightly softened, pour in the prepared soy sauce glaze and return the fried flatfish to the pan. Braise over medium heat for about 5-7 minutes, allowing the sauce to coat the fish evenly. Spooning the sauce over the fish as it cooks will enhance the flavor.
