  • 4 medium potatoes
  • 3 Tbsp cooking oil
  • 4 Tbsp soy sauce (for braising)
  • 100ml water
  • 1 green chili pepper
  • 2 Tbsp corn syrup (or sugar)
  • A sprinkle of sesame seeds

First, peel the 4 medium potatoes and cut them into bite-sized half-moon shapes. Rinse the cut potatoes under cold water to remove excess starch; this helps achieve a cleaner, more delicious braised texture. Drain them well.

Wash the green chili pepper, remove the seeds, and thinly slice it into strips. If you prefer a spicier kick, feel free to use a Cheongyang pepper.

Heat a frying pan over medium heat and add 3 tablespoons of cooking oil. Add the prepared potatoes and stir-fry them over medium-low heat until their surfaces become slightly translucent. Once the potatoes begin to soften, pour in 4 tablespoons of soy sauce around the edges of the pan.

After mixing the soy sauce with the potatoes, add 100ml of water. Give it a stir with a spoon to ensure everything is evenly coated. Cover the pan and let the potatoes simmer over medium-low heat until they are completely tender. Stir occasionally to prevent sticking.

When the potatoes are tender and the sauce has reduced to a glaze, add the sliced green chili pepper and 2 tablespoons of corn syrup (you can substitute with sugar if you prefer).
