Main Ingredients

  • 1/4 head fresh cabbage (approx. 200g)
  • 250g pre-cut pork for stir-fry (like Japchae pork)
  • 10 whole garlic cloves
  • 2 Tbsp chicken stock (or water)
  • Pinch of sea salt
  • Pinch of black pepper
  • 3 Tbsp cooking wine (mirin or sake)
  • 3 Tbsp cooking oil
  • Pinch of dried oregano (optional)

Cooking Instructions

Step 1

First, let’s marinate the pork to remove any odor and add flavor. Place the pork in a bowl, add 3 tablespoons of cooking wine and a pinch of black pepper. Gently mix with your hands and let it marinate for about 10 minutes. The cooking wine will help tenderize the meat and eliminate any gamey smell.

Step 1

Step 2

Wash the cabbage thoroughly under running water, remove the core, and then slice it into wide strips about 0.7cm thick. Slicing them too thinly will diminish the texture, so maintaining a moderate thickness is key. Lightly smash the 10 whole garlic cloves with the side of your knife, then mince them finely. The garlic’s aroma will infuse the dish, enhancing its overall flavor.

Step 2

Step 3

Heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add the minced garlic and stir-fry slowly. Be careful not to burn the garlic, and fry until a subtle garlic aroma is released. This process is crucial for infusing the oil with a rich garlic flavor.

Step 3

Step 4

Once the garlic is fragrant, add the marinated pork to the pan and stir-fry over high heat. Use chopsticks or a spatula to break up any clumps of meat and ensure it cooks evenly. Continue to stir-fry until the surface of the pork turns white.

Step 4

Step 5

When the pork is almost cooked through, add the shredded cabbage to the pan and stir-fry together. Pour in 2 tablespoons of chicken stock for an added depth of flavor. If you don’t have chicken stock, water is a fine substitute. Sprinkle in a little more black pepper and a pinch of salt to season.

Step 5

Step 6

Now, stir-fry everything over high heat until all the ingredients are well combined. Continue cooking until the cabbage is slightly softened and most of the liquid has evaporated. This will prevent the dish from becoming watery and ensure a delicious stir-fry. Finally, taste and adjust the seasoning with salt as needed. It’s best to add salt gradually while tasting.

Step 6

Step 7

Transfer the well-stirred pork and cabbage mixture to a serving dish. For an extra touch of aroma, sprinkle a pinch of dried oregano on top. The fragrant notes of oregano create a wonderful harmony with the pork and cabbage. Serve it over warm rice as a donburi or enjoy it as a simple side dish.
