Main Ingredients

  • 1 medium zucchini
  • 1/2 medium onion
  • 30g carrot (about 1/4 carrot)
  • 1/4 stalk green onion
  • A little olive oil (or cooking oil)

Seasoning

  • 1 Tbsp salted shrimp (saeujeot)
  • 1 Tbsp minced garlic
  • A pinch of sesame seeds
  • 1 Tbsp perilla oil or sesame oil

Cooking Instructions

Step 1

First, prepare the vegetables for stir-frying. Thinly slice the onion and the carrot into similar thickness. Slice the green onion diagonally.

Step 1

Step 2

Wash the zucchini thoroughly under running water and trim off the hard ends. Then, cut it in half lengthwise, and slice into thick, half-moon shapes about 0.5cm thick.

Step 2

Step 3

Heat a pan over medium heat and add a generous amount of olive oil. Add the minced garlic first and stir-fry until fragrant, being careful not to burn it. Once you can smell the garlic, your stir-fry base is ready!

Step 3

Step 4

Now, add the prepared zucchini, carrot, and onion to the pan. Stir gently with a spatula to combine them well as they cook.

Step 4

Step 5

When the onions start to turn translucent and the zucchini is slightly softened, add 1 tablespoon of salted shrimp (saeujeot) to season. Stir well with the vegetables for another 1-2 minutes.

Step 5

Step 6

The key is to turn off the heat before the zucchini becomes too soft, leaving a slight crispness. Turn off the heat when it’s about 80% cooked, and let the residual heat finish the cooking. Sprinkle generously with sesame seeds and drizzle with 1 tablespoon of perilla oil (or sesame oil) for a nutty aroma, and your Saeujeot Zucchini Stir-fry is perfectly complete! Enjoy your delicious meal!
