Even without many ingredients, the savory umami of salted shrimp combined with the natural sweetness of zucchini creates a magical side dish that will have you finishing your rice in no time. Main Ingredients- 1 medium zucchini
- 1/2 medium onion
- 30g carrot (about 1/4 carrot)
- 1/4 stalk green onion
- A little olive oil (or cooking oil)
Seasoning- 1 Tbsp salted shrimp (saeujeot)
- 1 Tbsp minced garlic
- A pinch of sesame seeds
- 1 Tbsp perilla oil or sesame oil

Cooking Instructions
Step 1
First, prepare the vegetables for stir-frying. Thinly slice the onion and the carrot into similar thickness. Slice the green onion diagonally.

Wash the zucchini thoroughly under running water and trim off the hard ends. Then, cut it in half lengthwise, and slice into thick, half-moon shapes about 0.5cm thick.

Heat a pan over medium heat and add a generous amount of olive oil. Add the minced garlic first and stir-fry until fragrant, being careful not to burn it. Once you can smell the garlic, your stir-fry base is ready!

Now, add the prepared zucchini, carrot, and onion to the pan. Stir gently with a spatula to combine them well as they cook.

When the onions start to turn translucent and the zucchini is slightly softened, add 1 tablespoon of salted shrimp (saeujeot) to season. Stir well with the vegetables for another 1-2 minutes.

The key is to turn off the heat before the zucchini becomes too soft, leaving a slight crispness. Turn off the heat when it’s about 80% cooked, and let the residual heat finish the cooking.
