Rice Burger Filling Ingredients
  • Well-fermented kimchi
  • 1 egg
  • 1 Tbsp mayonnaise
  • A pinch of roasted seaweed flakes
  • A pinch of salt
  • 1 bowl of warm rice
  • 1 Tbsp sesame oil
  • A pinch of sesame seeds
  • 1/2 can of drained tuna

Kimchi Stir-fry Seasoning
  • 1/2 Tbsp soy sauce
  • 1/2 tsp sugar

Cooking Instructions

Step 1

First, fry the egg in a pan until cooked. You can adjust the doneness to your preference, whether it’s runny or hard-boiled. Once cooked, set the egg aside to cool slightly.

Step 2

Drain the oil completely from the canned tuna using a sieve. Mix the drained tuna with 1 tablespoon of mayonnaise. This step reduces any fishy odor and enhances the savory flavor.

Step 3

Finely chop the kimchi. Lightly oil a pan and stir-fry the chopped kimchi. Once the kimchi is somewhat cooked, add 1/2 tablespoon of soy sauce and 1/2 teaspoon of sugar to season. Continue to stir-fry until the kimchi softens and the liquid reduces slightly; this will add more umami.

Step 4

In a bowl of warm rice, add 1 tablespoon of sesame oil, a pinch of salt, and a pinch of sesame seeds. Mix gently to combine, being careful not to mash the rice grains.

Line a bowl or mold, which you’ll use to shape the rice burger, with plenty of plastic wrap. Fill about two-thirds of the wrap with the seasoned rice. Use the back of a spoon to press the rice down evenly, creating a flat base.

Generously spread the prepared tuna-mayonnaise mixture over the rice. This tuna-mayo layer will be the rich, flavorful core of your rice burger.
