Let’s begin by preparing the ingredients for this delightful bacon and potato stir-fry.

Peel the potatoes and julienne them thinly using a mandoline or by hand. Gently rinse the julienned potatoes under cold running water to remove excess starch, then drain them thoroughly. This step is crucial for achieving a non-sticky, fluffy texture when stir-frying.

Slice the onion as thinly as possible, similar in thickness to the julienned potatoes. Thinly sliced onions will blend well with the potatoes and add a pleasant sweetness when cooked.

Cut the bacon into approximately 1cm thick pieces. Cutting them too thin might cause them to break apart during cooking, so aim for a moderate thickness.

Heat a generous amount of cooking oil in a preheated pan over medium heat. Add the julienned potatoes and stir-fry, making sure to stir occasionally to prevent them from sticking together.
