  • 300ml chicken stock (or water)
  • 100g ground beef (Korean beef brisket recommended)
  • 1 handful enoki mushrooms (approx. 50g)
  • 1 tbsp minced garlic
  • A few green beans (or peas)
  • A few apple mint leaves (for garnish)
  • 1 tbsp olive oil
  • 1 tsp butter

Beef Marinade

  • 1 tbsp soy sauce
  • 1 tbsp honey (or sugar)
  • Pinch of black pepper

Cooking Instructions

Step 1

Couscous, with its small, round grain-like appearance, offers a unique texture that is both fluffy and pleasantly chewy. It’s a delightful alternative to pasta, adding a unique and delicious twist to your meals.

Step 1

Step 2

Melt 1 tsp of butter in a pan over medium heat. Add 1 tbsp of minced garlic and sauté until fragrant. Once the garlic aroma is released, add a handful of enoki mushrooms and stir-fry until they soften. Set the sautéed mushrooms aside in a separate bowl.

Step 2

Step 3

In a separate bowl, combine 100g of ground beef with 1 tbsp soy sauce, 1 tbsp honey, and a pinch of black pepper. Mix well to marinate. (Tip: Using Korean beef brisket will result in a leaner and more tender texture.)

Step 3

Step 4

Prepare 300ml of chicken stock. If chicken stock is unavailable, plain water can be used as a substitute. The chicken stock will add a depth of flavor to the dish.

Step 4

Step 5

Measure out 1 cup of couscous (approximately 180-200g). Fill the measuring cup generously.

Step 5

Step 6

Pour the prepared chicken stock into a pot and bring it to a boil. Once boiling, add the couscous. Gently stir with a spatula or chopsticks to prevent clumping and to help the couscous absorb the liquid evenly.

Step 6

Step 7

Once the couscous becomes fluffy and has absorbed the liquid, add the reserved sautéed mushrooms and the marinated ground beef to the pot. Stir gently to combine all the ingredients. Cover the pot with a lid and let it steam over very low heat for 5 minutes. Since the beef is already seasoned with soy sauce and the chicken stock adds flavor, additional seasoning is usually not necessary.

Step 7

Step 8

Blanch the green beans in boiling water until tender, then drain. Arrange them attractively on top of the finished couscous dish. (Tip: Feel free to use other vegetables you enjoy, such as peas or broccoli.)

Step 8

Step 9

Finally, drizzle 1 tbsp of olive oil over the dish to enhance the flavor and give it a nice sheen.

Step 9

Step 10

Couscous, being similar to pasta, makes for a satisfying and filling meal. You can enhance the flavor and texture further by adding nuts or olives, according to your preference. Garnish with apple mint leaves for a visually appealing finish.
