  • 10 cups beef bone broth (approx. 2L)
  • 3 bunches crown daisy (approx. 300g after trimming)
  • 1 cup Korean radish (cubed, approx. 150g)

Seasoning

  • 1 Tbsp minced green onion
  • 1 Tbsp minced garlic
  • 2 Tbsp soybean paste (doenjang)

Cooking Instructions

Step 1

First, prepare the foundation of this delicious soup: the beef bone broth. Pour 10 cups of pre-made beef bone broth into a pot and heat it over medium heat. Once it begins to simmer, reduce the heat slightly to maintain a gentle boil.

Thoroughly wash the 3 bunches of crown daisy under running water to remove any dirt or debris. Gently pat them dry, then trim them into bite-sized pieces, about 6cm in length. This size makes them easy to cook and eat.

Add the prepared crown daisy and the 1 cup of cubed Korean radish to the pot with the simmering broth. Ensure the ingredients are submerged, then bring the soup back to a simmer over medium heat. Cook until the radish becomes translucent and the crown daisy wilts slightly.

As the soup starts to boil again, add the 2 tablespoons of soybean paste. It’s best to dissolve it gradually by gently stirring it into the broth, perhaps around the edges of the pot, to prevent clumps. For an even richer flavor, add the minced green onion and minced garlic now.

After adding the soybean paste, let the soup simmer vigorously for a little longer until the crown daisy is completely tender and the flavors have melded beautifully. You can test for doneness by piercing the vegetables with a chopstick. Once ready, ladle this steaming, aromatic soup into bowls.
