Main Ingredients
  • 300g Beef Brisket (thinly sliced)
  • 250g Bean Sprouts
  • 1 Green Onion
  • 1/2 Onion
  • 3 Tbsp Cooking Oil

Seasoning Mix
  • 1 Tbsp Minced Garlic
  • 2.5 Tbsp Oyster Sauce
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Sugar
  • Pinch of Black Pepper
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, thoroughly wash the bean sprouts under cold running water. Gently agitate them while rinsing to remove any dirt or debris. After washing, drain them very well in a colander. Ensuring they are dry is key to prevent the stir-fry from becoming watery.

Step 2

Thinly slice the green onion into bite-sized pieces. Peel the onion and slice it into thin strips, similar in length to the green onion. This uniformity helps everything cook evenly and integrate well.

Step 3

Heat the cooking oil in a pan over medium-low heat. Add the minced garlic and sliced green onion. Stir-fry until fragrant and lightly golden. This step infuses the oil with aromatic flavors, setting the stage for the stir-fry.

Step 4

Once the garlic and green onions are fragrant, add the thinly sliced beef brisket to the pan. Sprinkle with mirin and a pinch of black pepper. The mirin helps tenderize the beef and reduce any gamey odor, while the pepper adds a subtle warmth. Stir-fry the beef until it’s no longer pink.

Step 5

When the beef is almost fully cooked, add the drained bean sprouts and the seasoning mix (oyster sauce, soy sauce, and sugar) to the pan. Turn the heat up to high and stir-fry quickly. Cooking on high heat for a short time is crucial to keep the bean sprouts crisp and refreshing.

Step 6

As soon as the bean sprouts begin to wilt slightly, add the sliced onions to the pan. Continue to stir-fry until the onions are tender-crisp. The onions will add a touch of sweetness and complexity to the dish.

Step 7

Finally, sprinkle with toasted sesame seeds for an added nutty aroma and flavor. The key to a great beef brisket and bean sprout stir-fry is to not overcook the vegetables – they should retain a pleasant crunch. Serve immediately and enjoy this delightful dish with your favorite rice!
