  • Thick handmade tofu, 1 block (approx. 1kg)
  • Savory beef brisket, 250g
  • Sweet onion, 1/2
  • Aromatic green onion, 1 stalk (approx. 12cm length)
  • Spicy Cheongyang chili peppers, 2
  • Clear water, 2.5 cups
  • Grapeseed oil, a little (for stir-frying)

Seasoning

  • Gochugaru (Korean chili flakes) for deep flavor, 2 Tbsp
  • Gochujang (Korean chili paste) for savory taste, 1 Tbsp
  • Doenjang (Korean soybean paste) for a nutty flavor, 1/2 Tbsp
  • Soy sauce for rich umami, 4 Tbsp
  • Sugar to add sweetness, 1 Tbsp
  • Minced garlic for aroma, 2 Tbsp
  • Sesame oil for a nutty finish, 1 Tbsp

First, lightly rinse the thick handmade tofu under running water and pat dry. Slice it into thick pieces, about 1cm thick. Be careful not to slice them too thinly, as they might break apart!

Let’s make the key to a delicious stew: the seasoning paste! In a bowl, combine the gochugaru, gochujang, doenjang, soy sauce, sugar, minced garlic, and sesame oil. Mix thoroughly to create a flavorful seasoning paste in advance. Ensure all ingredients are well combined.

Prepare the fresh beef brisket by cutting it into bite-sized pieces if necessary. It can be used directly as is.

Thinly slice the onion to add sweetness, and chop the green onion into large pieces for fragrance. Finely chop the Cheongyang chili peppers to adjust the spiciness. Feel free to adjust the amount of chili peppers to your preference.

The first step to a deep flavor! Lightly coat the bottom of a pot with grapeseed oil. Add about 2/3 of the sliced green onions and onions. Stir-fry over medium-low heat until fragrant and the natural sweetness of the vegetables is released.

Add the prepared beef brisket to the fragrant sautéed vegetables. Use chopsticks or a spatula to gently separate the brisket so it doesn’t clump together. Stir-fry until it releases a savory aroma, until the meat is lightly cooked.

Spoon about 1 Tbsp of the prepared seasoning paste over the stir-fried meat. Then, carefully arrange the sliced tofu in a single layer around the edges of the pot. Place the tofu gently to prevent it from breaking.

Pour the remaining seasoning paste evenly over the tofu. Add 2.5 cups of clear water. This amount of water should cover the ingredients generously.

Now it’s time to simmer the stew to perfection. Bring it to a boil over high heat, then reduce the heat to medium once it starts bubbling. Continue to simmer for about 10-15 minutes, either with the lid slightly ajar or off, basting the tofu with the broth frequently. This allows the tofu to absorb the flavors.
