Beef Brisket Pasta Ingredients- Beef brisket slices 10-12 pieces
- 1/2 onion
- 2 egg yolks
- 1 whole egg
- 1 Tbsp grated Parmesan cheese (optional)
- Pinch of black pepper
- 100g whole wheat spaghetti
- Pinch of parsley flakes
- 500ml water
- 1/3 Tbsp salt
Cooking Instructions
Step 1
In a bowl, whisk together 2 egg yolks and 1 whole egg. Add 1 tablespoon of grated Parmesan cheese and mix well to create the sauce base. The Parmesan adds extra flavor, but you can omit it if you prefer.
Step 2
Heat a pan over medium heat. Add 10-12 slices of beef brisket and cook until golden brown on both sides. Season lightly with salt and pepper while cooking to enhance the rich, savory flavor of the brisket.
Step 3
Beef brisket releases a good amount of fat when cooked. Remove the cooked brisket to a plate temporarily, then carefully blot about half of the rendered fat from the pan with paper towels. This step helps to make the pasta less greasy.
Step 4
Using the remaining flavorful fat in the pan, sauté the thinly sliced half onion. Cook until the onion becomes translucent and starts to turn a light brown color, which will bring out its natural sweetness.
Step 5
Once the onions are nicely caramelized, return the cooked beef brisket to the pan. Stir-fry the brisket and onions together for about 2 minutes, allowing their flavors to meld beautifully.
Step 6
In a deep pot, bring 500ml of water and 1/3 tablespoon of salt to a rolling boil over high heat. Add 100g of whole wheat spaghetti and cook for approximately 8 to 10 minutes, or until al dente. For whole wheat pasta, it’s often best to cook it a minute or two longer than package directions suggest for a pleasant chew.
Step 7
Drain the cooked spaghetti slightly and add it directly to the pan with the sautéed beef brisket and onions. Pour the prepared egg mixture over the pasta and quickly toss everything together while it cooks. Continuously stir to prevent the egg from scrambling into clumps and to create a creamy sauce.
Step 8
The pasta is ready when the egg mixture has cooked and coated the noodles. If you prefer a scrambled egg-like texture, stir vigorously just before removing from heat. Finish by sprinkling a pinch of black pepper and parsley flakes over the top for a beautiful presentation. Serve immediately and enjoy!
