Beef and Tofu Stir-fry that Pairs Wonderfully with Pink Peppercorns
Certain types of peppercorns are known to have a special affinity with specific dishes. Today, we’re featuring a delightful beef stir-fry that beautifully highlights the flavor of pink peppercorns, which are exceptionally well-suited to beef. Experience the vibrant aroma of pink peppercorns, complemented by tender beef, mild tofu, and crisp vegetables. This dish is perfect as a side for rice or as a standalone meal.
Main Ingredients- Beef (for bulgogi or stir-fry) 150g
- Pink peppercorns (whole grain type recommended) to taste
- Tofu (firm, for pan-frying) 150g
- 1/2 Onion
- 300g Cabbage
- 3 Asparagus spears
Cooking Instructions
Step 1
Wash all your fresh vegetables thoroughly and drain them completely. Excess water can make the stir-fry soggy. Slice the onion thinly, and chop the cabbage into bite-sized pieces. Trim the tough ends off the asparagus spears and cut them into 2-3 cm lengths. Cut the tofu into 1.5 cm thick slices and gently pat them dry with paper towels. This helps the tofu maintain its shape when stir-fried.
Step 2
Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the sliced onion and stir-fry until it becomes fragrant and slightly translucent. Add the beef and increase the heat to high. Stir-fry quickly until the beef is just browned on the outside and still slightly pink. Overcooking will make the beef tough. If desired, add minced garlic at this stage for extra flavor.
Step 3
Once the onion and beef are partially cooked, add the other vegetables in order of their cooking time. Add the asparagus first, as it’s firmer, and stir-fry for about a minute. Then, add the cabbage. Keep the heat high and stir-fry quickly to retain the vegetables’ crispness. Cook for just 1-2 minutes until the vegetables are vibrant in color.
Step 4
When the cabbage has softened slightly and the vegetables are nearly cooked, gently add the prepared tofu slices to the pan. Stir carefully to avoid breaking the tofu. Continue to cook for about 1 minute, allowing the tofu to heat through and meld with the other ingredients.
Step 5
Add 1-2 tablespoons of oyster sauce, adjusting the amount to your preference. Oyster sauce adds a savory depth and also helps season the dish, so taste and adjust as needed. Stir everything together for another minute, ensuring the sauce coats all the ingredients evenly. Add pink peppercorns at this point if you enjoy their unique aromatic and slightly spicy flavor.
Step 6
Finally, sprinkle with ground black pepper or a few more whole pink peppercorns for an extra burst of aroma, if you like. A sprinkle of toasted sesame seeds adds a lovely nutty flavor. Serve hot over steamed rice for a delicious and satisfying meal. Enjoy your cooking!
