We made these wonderfully savory and nutritious black soybean pancakes using freshly cooked and ground seoritae beans. Enjoy a satisfying meal or a hearty snack with these simple yet delightful pancakes.

Cooking Instructions
Step 1
First, prepare the main ingredients for the black soybean pancake batter: the cooked and mashed seoritae beans. Also, get ready the chives, egg, zucchini, onion, and carrot, which will add flavor and texture to the pancake. If you have the cooked beans ready, it makes the process much more convenient.
Step 2
Finely chop the vegetables to a size suitable for pancakes. Mince the onion, zucchini, and carrot. Cut the chives into approximately 2cm lengths. Finely chopped vegetables will result in a softer texture for your pancakes.
Step 3
In a large bowl, combine the mashed black soybeans, 1 egg, and the finely minced zucchini, carrot, and onion. Add 1 tablespoon of all-purpose flour for binding and a pinch of salt to season the batter. Adjust seasoning to your preference.

Using a spatula or spoon, mix all the ingredients thoroughly until well combined to form the batter. The batter should not be too watery or too stiff; aim for a consistency where the mashed beans, vegetables, and egg create a cohesive mix. If the batter seems too thin, you can add a little more flour.

Scoop portions of the prepared batter and shape them into round, pancake-like forms. Making them thin will result in a crispier pancake, while thicker ones will be more moist inside. You can also make small, cute shapes, especially if serving to children.

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Carefully place the shaped pancake batter into the hot oil. Keep the heat on low to medium-low to ensure the pancakes cook through evenly and turn a beautiful golden brown without burning. Cooking on low heat helps to preserve the nutty flavor of the beans and prevent a raw bean taste.
Step 7
Once the bottom of the pancake is golden brown and starting to set, carefully arrange the pre-cut chives on top of each pancake. The fresh aroma of the chives will further enhance the overall flavor of the pancakes.

After the side with chives has cooked for a minute, gently flip the pancakes to cook the other side until it’s also golden brown and crispy. Although the black soybeans are already cooked, the added vegetables require gentle cooking. Continue to cook on low heat until both sides are beautifully browned and the pancakes are cooked through.
