Cooking Instructions

Step 1

First, prepare the vegetables. Wash the napa cabbage and baby bok choy thoroughly. Cut them into bite-sized pieces, about 2cm in length. Bring a pot of water to a boil and add 0.5 Tbsp of salt. Add the prepared vegetables and blanch them over high heat for 1 to 2 minutes. This quick blanching helps retain their vibrant color and crisp texture.

Step 2

Drain the blanched vegetables in a colander and let them cool slightly. In a separate mixing bowl, combine the seasoning ingredients: 4.5 Tbsp soy sauce, 3 Tbsp toasted sesame seeds, and 1 Tbsp sesame oil. Add the pine nuts if using. Gently toss the blanched vegetables with the seasoning until well coated. Taste and adjust seasoning if needed, adding a tiny pinch of salt if necessary.

Step 3

In a large bowl, prepare the savory dressing by mixing together the soy sauce, toasted sesame seeds, sesame oil, and pine nuts. Add the blanched napa cabbage and baby bok choy to the bowl. Gently toss everything together to ensure the vegetables are evenly coated with the delicious seasoning. Be careful not to overmix, to maintain the crispness of the vegetables. If you find the flavor is not quite right, you can add a very small amount of salt to reach your desired taste.
