First, let’s prepare the star ingredient: the ‘braised abalone’. (The abalone shown in the photo is not the main focus today, so I’ll only briefly show it!) Clean the abalone thoroughly, then score it lightly with a knife before cutting it into bite-sized pieces. In a pot, combine soy sauce, cooking wine, plum extract, dried chili peppers, and whole garlic cloves. Bring to a boil, then add the abalone and simmer until it’s well-braised and flavorful. Using this pre-made braised abalone will significantly enhance the flavor of your fried rice.

Heat 1 tablespoon of perilla oil (or sesame oil) in a pan over medium heat. Add the finely chopped onion and sauté until it becomes translucent and slightly softened. Next, add the finely chopped carrot and continue to stir-fry until the carrots are tender-crisp.
