Main Ingredients- 200g beef eye round, trimmed
- 300g peeled quail eggs (1 bag)
- 1/2 onion
- 5 cloves garlic
- A pinch of whole peppercorns
Braising Sauce- 4 Tbsp soy sauce
- 2 Tbsp sugar
- 1 Tbsp honey
- 1 Tbsp sesame oil
- 1 Tbsp cooking wine (mirin) or soju
- 4 Tbsp soy sauce
- 2 Tbsp sugar
- 1 Tbsp honey
- 1 Tbsp sesame oil
- 1 Tbsp cooking wine (mirin) or soju
Cooking Instructions
Step 1
To remove excess blood from the beef, soak it in clean cold water for about 30 minutes. This process helps tenderize the meat and reduce any gamey odor.
Step 2
Place the rinsed beef into a pot. Add the chopped onion, garlic cloves, and whole peppercorns. For an extra touch to eliminate any lingering meatiness, add 1 Tbsp of cooking wine (or soju if you don’t have mirin). These aromatics will enhance the beef’s flavor.
Step 3
Bring the pot to a rolling boil over high heat. Once boiling, reduce the heat to medium and let it simmer gently for about 40 minutes, covered. This ensures the beef becomes wonderfully tender. (This cooking time is for 200g of beef; adjust based on the amount of meat and heat level. Cook until the beef is fork-tender.)
Step 4
Carefully remove the tender beef from the pot and let it cool slightly. It’s best to let it cool down enough to handle comfortably before shredding.
Step 5
Don’t discard the cooking liquid! Strain the liquid, discarding the solids like onion and garlic. This flavorful broth will be the base for your braising sauce, adding depth and richness to the final dish.
Step 6
Once the beef has cooled enough, put on disposable gloves and shred the beef along the grain into bite-sized pieces. As you shred, remove any fatty or tough parts to ensure the best texture in your braised dish.
Step 7
Prepare the quail eggs. Using pre-peeled quail eggs significantly cuts down on preparation time.
Step 8
Rinse the peeled quail eggs under running water several times. Make sure they are thoroughly cleaned to remove any residual shell fragments or impurities.
Step 9
In a pot suitable for braising, pour in the reserved beef broth. If the broth seems insufficient, you can add a little water. This broth forms the savory foundation of your braised dish.
Step 10
Add the prepared quail eggs and the shredded beef to the pot. Now, add 4 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp honey, and 1 Tbsp sesame oil. Bring the mixture to a boil over high heat. Taste the sauce and adjust the seasoning if necessary by adding more soy sauce or water to reach your desired saltiness.
Step 11
Reduce the heat to medium and let it simmer for at least 10 minutes, allowing the flavors to meld and the sauce to thicken slightly. Stir occasionally to ensure the ingredients are evenly coated with the sauce.
Step 12
And there you have it! Your delicious braised beef and quail eggs, a comforting side dish that your whole family will love, is ready. Serve it over warm rice and enjoy!
