  • 200ml water (for boiling burdock)

First, prepare the burdock root strips. If you’re using pre-cut burdock, gently rinse them under running water to remove any debris. If you’re using whole burdock root, peel it and then cut it into thin, long strips. To prevent the cut burdock from turning brown, you can soak it in water for a short while before rinsing.

Now, let’s make the delicious seasoning sauce for our braised burdock. In a bowl, combine 3.5 Tbsp soy sauce, 1.5 Tbsp sugar, 4 Tbsp corn syrup, and 1 Tbsp rice wine. Stir well until the sugar is dissolved. Making the sauce in advance will save you time during cooking.

Heat 2 Tbsp of cooking oil in a pan over medium-high heat. Add the prepared burdock strips and stir-fry for about 2-3 minutes until they soften slightly. Once the burdock is slightly tender, pour in all of the prepared seasoning sauce and continue to cook. Start with high heat for a brief stir, then reduce to medium heat to allow the sauce to absorb into the burdock.

As the sauce begins to thicken and reduce, keep the heat at medium. Add another 2 Tbsp of corn syrup and a little sesame oil to finish. This step adds a beautiful gloss and a rich, nutty flavor to the burdock strips, making them even more delicious. Continue to stir-fry for another 1-2 minutes, ensuring the sauce coats the burdock evenly.
