Savory Braised Button Mushrooms: A Simple & Delicious Side Dish

Button mushrooms are quite expensive lately, so I bought some discounted ones and made this wonderful side dish. They have a chewy texture and a savory sauce that makes them incredibly satisfying with rice.

Main Ingredients

  • 500g Button mushrooms
  • 8 whole cloves Garlic
  • 7-8 Korean green chili peppers (Kkwari Gochu)
  • 1 stalk Green onion

Seasoning Ingredients

  • 2 Tbsp Perilla oil (Deulgireum)
  • 1 Tbsp Cooking wine (Mirin)
  • 2 Tbsp Plum extract (Maesilcheong)
  • 3 Tbsp Soy sauce
  • 2 Tbsp Grain syrup or corn syrup
  • Sesame seeds, to garnish

Cooking Instructions

Step 1

Avoid washing the button mushrooms directly with water as they can become mushy. Instead, gently wipe them clean with a damp paper towel. If the skin bothers you, you can peel it off lightly. Cut the mushrooms into quarters for bite-sized pieces.

Cut the whole garlic cloves into large pieces. For the Korean green chili peppers, prick them a few times with a fork. This allows the sauce to penetrate better and makes them more flavorful.

Slice the green onion diagonally into about 0.5cm thick pieces. If you have red chili peppers, cut them in half, remove the seeds, and then slice. (Alternatively, you can use red bell pepper instead of red chili peppers for a lovely color and a hint of sweetness.)

Heat a pan over medium heat and add a generous amount of perilla oil. Add the prepared garlic and sauté until fragrant. Once the garlic aroma is released, add the button mushrooms and Korean green chili peppers. Stir-fry until the vegetables slightly soften.

Once the mushrooms and peppers are somewhat sautéed, add the cooking wine, plum extract, soy sauce, and sliced red chili peppers (if using). Cook over medium-high heat, stirring occasionally, until the sauce reduces and becomes mostly absorbed by the ingredients.

When only a little sauce remains in the pan, add the sliced green onion and grain syrup (or corn syrup). Sprinkle with sesame seeds for garnish. Mix well, and your delicious braised button mushrooms are ready to serve! (If you don’t have grain syrup, corn syrup or oligodang will work just as well.)
