  • 1/2 Onion, thinly sliced
  • 4 pieces Chicken thigh meat (boneless, cut into bite-sized pieces)
  • 2 bowls Cooked rice (warm)
  • 2 heads Bok choy, cut into 2-3 cm sections
  • 1 Tbsp Cooking oil

Chicken Marinade
  • Pinch of salt

Flavorful Soy Glaze
  • 3 cloves Garlic, thinly sliced
  • 1 Tbsp Sugar
  • 3 Tbsp Soy sauce
  • 1 Tbsp Mirin (or cooking sake)
  • 1 Tbsp Corn syrup (or maltose)

Cooking Instructions

Step 1

First, prepare the chicken. Take the bite-sized chicken pieces and sprinkle them lightly with salt and black pepper for seasoning. This step helps to remove any gamey odor from the chicken and allows the flavors to penetrate, making it more delicious.

Step 2

Next, prepare the vegetables. Wash the bok choy thoroughly, trim the tough ends, and cut them into 2-3 cm sections. Peel the onion, cut it in half, and then slice it thinly into strips about 0.5 cm thick. Peel the garlic cloves and slice them thinly into slivers. Don’t worry too much about making the vegetables too thin, as they will shrink when cooked.

Step 3

Now, let’s start stir-frying. Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the seasoned chicken pieces and stir-fry until the surface is golden brown and the chicken is about half cooked. Then, add the thinly sliced garlic and stir-fry until fragrant. The aroma of the garlic will enhance the chicken’s flavor.

Step 4

Once the chicken is partially cooked, it’s time to add the delicious soy glaze. Combine 1 tablespoon of sugar, 3 tablespoons of soy sauce, 1 tablespoon of mirin (or cooking sake), and 1 tablespoon of corn syrup (or maltose) in the pan. As the sauce begins to reduce and thicken, add the sliced onions to the pan. Stir-fry the onions with the chicken until they become translucent and tender. The sweetness from the onions will blend beautifully with the soy glaze, creating a richer flavor.

When the onions are about half cooked, add the prepared bok choy. Stir-fry quickly for just 1-2 minutes until the bok choy is slightly wilted but still retains a pleasant crispness. Overcooking the bok choy can make it too soft, so a quick stir-fry is best.
